Fried Chicken with Koji Amazake and Tartar Sauce

Chicken Thigh

Any vegetables as a side dish

Plus Koji Koji Amazake

Corn Starch
5 tbsp.
Salad Oil
3 tbsp.

White Wine

Soy sauce

Lemon Juice

Garlic (grated)
1/2 tsp.
【Tartar Sauce】
Plus Koji Koji Amazake
1/2 tbsp.
Mayonnaise
4 tbsp.
Onion (Chopped)

1.
Cut the chicken thigh into half. Put the chicken in a zipped bag and add Koji Amazake. Rub well by hand.

Add (a) in a bag and rub well. Remove the air well and keep it in a freezer. (it can be stored for approx. 1 months.)
3.
Move the frozen chicken into refrigerator and defrost.

Coat the chicken thigh with corn starch. Heat the salad oil in a pan and put the chicken with the skin side down.
5.
Fry the chicken with weak medium heat until the both sides of the chicken get nicely brown. Remove the chicken and leave it for approx. 5 minutes and cut into proper sizes.
6.
Mix the ingredients for tartar sauce.
7.
Serve the chicken and put the sauce. Put lemon and vegetables at the side.
