Place the butter and Daizu Labo Soy Flour in a pot over low heat, stirring as the butter melts.

Once the Soy Four has been incorporated, cook, stirring, for about 1 minute. Remove the pot from the heat to a wet cloth. Gradually add the milk, stirring well after each addition.

Once all the milk has been incorporated, return to the heat. Once the mixture comes to the boil, turn the heat up to medium and cook, stirring continuously, for about 5 minutes.

When thickened slightly, season with salt, pepper and nutmeg and remove from the heat.
